Sato Omakase is seeking a skilled Prep Chef to support our daytime kitchen operations. This role is essential to the foundation of our omakase service and is suited for a chef who values precision, discipline, and refined technique.

Position Overview
Hours: Morning start until approximately 2:00 PM
Schedule: Tuesday – Saturday (5 days)
Flexible scheduling available (fewer days may be arranged)
This position offers a consistent daytime schedule with flexibility, ideal for chefs seeking balance while maintaining a high standard of craft.
Key Responsibilities
Fish filleting and precise breakdown
Fish curing and preparation for omakase service
High-level prep supporting dinner service
Maintaining an immaculate and organized prep environment
Adhering strictly to food safety and handling standards
Qualifications
Proven experience in fish filleting
Experience with fish curing techniques strongly preferred
Sushi or Japanese kitchen background is a plus
Calm, disciplined, and detail-oriented work style
Ability to work independently and with consistency
Legal authorization to work in the U.S.
