Convection ovens differ from other ovens in that a fan is used to provide rapid circulation of heated air within the chamber. This permits foods to be cooked on multiple racks instead of on a hearth; consequently almost the entire volume of oven space can be utilized. This results in an increased production capacity. Rapid air circulation also maintains an even temperature in all parts of the oven chamber.
Since heat transfer into the food products is increased by the forces a convection, a lower temperature and shorter cooking time may be use a Lower temperatures will minimize the shrinkage of roasts.
Convection ovens is Energy Star Rated and is more energy efficient than other types of ovens.

New Restaurant Equipment
With such a huge list of benefits in being a new unit, why would you risk your hard-earned business resources on a used unit with no warranty that may or may not pass a board of health inspection?
There always seems to be a glut of used charbroilers, griddles, ranges, and deep fryers restaurant equipment for sale online, and for the budget minded restaurateur, the lure of almost new looking piece of restaurant equipment can be tempting. Usually the used equipment is sold "as is," with no warranty or possibility of a refund if it breaks down or needs repairs days after your purchase.
Quite often the availability of service for used equipment is not up to par for the service you would receive for a new unit purchased under warranty. You never have any idea of how much the used equipment has been used, or how hard it worked. This can cause unforeseen problems. Remember that many used items are being replaced by energy saving models.
Buying used equipment tends to also be a cash and carry experience. You will need to bring your own truck and enough people to carry whatever you buy.
You never know when an older model is due for a major overhaul or has been removed from NSF approval status of the National Sanitation Foundation. Some types of older equipment may fail to meet current health codes, which is no bargain if they cause problems with the health inspector.
