Qualifications
We are seeking candidates who possess:
A genuine passion for cooking, leadership, and operational excellence
At least two years of experience in a full-service or fine dining kitchen
Previous supervisory or sous chef experience preferred
Strong culinary fundamentals, with artisanal pizza experience a major plus
Proven ability to perform in a fast-paced, high-volume environment
Strong communication skills and a collaborative leadership style
Experience with food cost control, inventory management, and staff scheduling
Responsibilities
As the Sous Chef, your responsibilities will include:
Supporting and leading all back-of-house operations in partnership with the Executive Chef
Taking full ownership of pizza operations, from dough production through service execution
Overseeing food preparation, cooking, and presentation to ensure consistency and quality
Expediting service during peak hours and maintaining kitchen flow
Hiring, training, coaching, and supervising BOH staff
Managing inventory, ordering, and food cost controls
Ensuring compliance with all food safety, sanitation, and labor regulations
Collaborating with FOH and management to maintain clear communication and service alignment
Key Responsibilities
Execute and uphold Mentone’s culinary standards with precision and discipline
Maintain impeccable food quality, presentation, and consistency
Foster a respectful, accountable, and high-performing kitchen culture
Support menu development and seasonal menu evolution
Utilize fresh, high-quality ingredients while maintaining operational efficiency
Partner with leadership to optimize kitchen performance, profitability, and guest experience
