From a COOKING BLOG: "One of the best presents I got last Christmas was from my daughter, who bought me a vintage French sandwich press. I like to fill these with cheese and sliced ham. This waffle press iron is a scallop shell pattern made in France by SEFAMA. It is made of cast aluminum, stainless steel shaft, and a plastic handle, in mid-century style with a hook that holds the press closed while the sandwich is being made. The sandwich maker can be placed on a gas stove burner OR an electric burner to heat the sandwich press. After heating, the sandwich maker creates an imprint of the scallop shell on the sandwich.
The ideal type of bread is one that is fairly sturdy, and will fit in the press. I like to use bread from a Pullman loaf or similar. Turn on the gas burner on medium-low heat, which will toast the sandwich a little slower. I have found that preheating the press makes for a better crust on the sandwich. Once warm, grease the inside of the press using some melted butter and a silicon brush. Carefully place the sandwiches atop the mould, so that the shell is directly in the centre of the top slice of bread. Close the sandwich maker and clasp the hook to lock the sandwich press in place. Trim any bread that gets pressed out of the press.
It makes fantastic tasting sandwiches! If you can find one of these, buy one and use it! You'll really up your sandwich game!"
