About Us
Allora is a modern Italian seafood restaurant located in the heart of East Sacramento. We are a wine-centric gathering place, celebrating native Italian grapes and Sacramento's bounty by sourcing local ingredients.
We are looking for a motivated hospitality professional to join our diverse and talented team in a hybrid Sommelier / Server role. This position blends the responsibilities of a fine dining server/captain with the elevated expectations of a floor sommelier and service supervisor.

Position Overview
As the primary point of contact for guest interactions, the Sommelier/Server is responsible for selling and serving food and beverages with expertise, authentic hospitality, and professionalism. In addition, this role alternates into sommelier/floor supervisor shifts, focusing on wine program leadership, guest engagement, and team support.

While this position currently blends server/captain responsibilities with sommelier duties, the server portion may be temporary. Over time, this role may transition into a part-time, dedicated sommelier position depending on the needs of the restaurant and the development of the wine program.

Core Responsibilities

Server / Captain Duties:
• Greet and engage guests, ensuring professional, gracious service at all times.
• Take orders, serve food and beverages with knowledge of menu items and proper service standards.
• Maintain clean and organized workstations consistent with Allora’s philosophy and culture.
• Communicate clearly with team members and ensure smooth service operations.
• Represent the restaurant with professionalism and integrity.

Sommelier / Floor Supervisor Duties (non-disciplinary leadership):
• Supervise shifts by touching tables, assisting guests, and supporting the service team.
• Ensure the highest standards of hospitality and guest experience throughout service.
• Maintain and organize wine inventory and keep the wine cellar clean and structured.
• Provide curated wine pairings and support guests in wine selection.
• Print and customize menus as needed for service.
• Communicate allergies and dietary restrictions clearly to the kitchen.
• Mentor and guide service staff on wine knowledge and hospitality standards.

General Expectations
• Act with integrity, honesty, and knowledge that promote the culture of Allora.
• Ensure that all guests feel welcome and are given responsive, professional service at all times.
• Maintain clean, organized, and cohesive workstations.
• Operate with efficiency, respect, professionalism, teamwork, patience, and initiative.
• Recognize areas for improvement and offer constructive solutions.
• Understand and uphold restaurant programs, procedures, and policies.
• Represent the restaurant positively in all communications and interactions.

Qualifications
• 2–4 years of fine dining service experience, with extensive food and wine knowledge.
• Formal sommelier training or equivalent wine expertise strongly preferred.
• In-depth understanding of the native grape varieties of Italy, the classification systems of major wine-growing regions within Italy, c classic Italian food and wine pairings, and the history of important Italian wine regions.
• Strong ability to engage with guests and lead by example on the dining room floor.
• Knowledge of service procedures, POS systems (TOAST POS a plus), and fine dining standards.
• Excellent communication and interpersonal skills.
• Cleanliness, organization, and the ability to work well in a team environment.
• Must meet minimum legal age to serve alcohol.
